Walnut oil is a vegetable oil made from walnut kernels through pressing or solvent extraction. The oil is clear, mostly light yellow or pale amber, with the distinctive nutty aroma of walnuts. It is a fairly common specialty woody edible oil in China, with production areas mostly concentrated where walnuts are widely grown.

From a nutritional standpoint, walnut oil consists mainly of unsaturated fatty acids, among which linoleic acid and linolenic acid are present in relatively high amounts, and it also contains components such as vitamin E, so it is often regarded as an edible oil with good nutritional value. However, like ordinary cooking oils, it is not low in calories, so daily consumption still requires attention to controlling the amount used.

By processing method, walnut oil falls roughly into two categories: cold-pressed and hot-pressed. Cold pressing uses lower temperatures and better preserves the natural aroma and nutrients of the walnuts, giving a light-colored oil with a mild taste; hot pressing yields a relatively higher oil extraction rate, with a stronger aroma and a slightly darker color. When buying, pay attention to the processing method stated on the packaging.

For eating, walnut oil is suitable for cold dishes, noodles, stirred into porridge or baby food, and some people use it for low-temperature cooking. Because of its high unsaturated fatty acid content, prolonged high-temperature frying easily damages the nutrients and produces off-flavors, so it is best avoided. For storage, keep it sealed, away from light, and in a cool place, and use it up as soon as possible after opening; if it develops a rancid smell, it should no longer be eaten.
