The yellow croaker is a sea fish, and this point is very clear. Also known as the yellow fish, it belongs to the genus Larimichthys in the family Sciaenidae and lives its entire life in seawater. It is mainly distributed in China's coastal waters such as the East China Sea, Yellow Sea, Bohai Sea and South China Sea, and is a common commercial marine fish.

By body size, the yellow croaker is mainly divided into two varieties: the large yellow croaker and the small yellow croaker. The large yellow croaker is bigger, with a slender tail stalk and relatively small scales; the small yellow croaker is smaller, with a slightly higher back. The two look similar, but they are not different growth stages of the same fish, but two separate varieties.

The yellow croaker habitually inhabits the middle and lower layers of coastal waters and has the habit of seasonal migration as water temperature changes. When the water temperature drops, it swims to deep water to overwinter, and when the weather warms up again, it moves to nearshore waters to feed and spawn. Wild resources were once noticeably reduced by overfishing, and today a considerable portion of the yellow croaker on the market comes from nearshore cage aquaculture.

As a common sea fish, the yellow croaker has delicate, flaky flesh, few bones and a fresh taste, and is rich in high-quality protein and various minerals. It is suitable for steaming, braising in soy sauce, or making soup. When selecting, choose those with clear eyes, bright red gills and a naturally glossy body; after buying, it is best to refrigerate or cook it as soon as possible to preserve texture and freshness.
