Sundays are always lazy, especially in winter, when the bed just won't let me get up, so I make do with a simple, quick breakfast. A few slices of toast, some whole grains, and vegetables are more than enough!

Ingredients

One:

Millet - a small handful

Oatmeal - a small handful

Water - as needed

Two:

Toast slices - 3 pieces

Carrot - 50 g (half a carrot)

Corn kernels - 50 g (half a corn cob)

Green peas - 50 g

Cheese slices - 3 slices

Ketchup - as needed

Butter - a small piece

Salt - as needed

Instructions

  1. Put the millet and oatmeal into a soy milk maker, add an appropriate amount of water, and turn on the rice paste function; also prepare the toast slices and cheese slices.

2. Dice the carrot, remove the corn kernels from the cob, shell the peas, put them into boiling water and blanch for one minute, then remove; next, heat a frying pan until dry, add an appropriate amount of butter, stir-fry the blanched vegetable pieces, and add a little salt as needed. (You can also add some meat, such as bacon or lean pork. I first stir-fried some lean pork, then added the vegetable pieces.)

3. After stir-frying the vegetable pieces, set them aside. Use the bottom of a cup or bowl, or another method, to make a hollow in each toast slice, spread on an appropriate amount of ketchup (or any other sauce you like), then first add some vegetable pieces, tear the cheese slices into small pieces and place them on the vegetable pieces, continue adding some vegetable pieces, then add some more torn cheese pieces. Prepare all three toast slices the same way.

4. Preheat the oven to 175 degrees, line a baking tray with parchment paper, place the prepared toast slices on it, and bake for 6 minutes, until the cheese slices melt. If baked too long, the toast slices will become crispy; if you like that, you can extend the time by two minutes.

You can also use a frying pan to fry them. Brush a thicker layer of oil on the bottom of the pan, place the toast slices in, cover with a lid, and fry over low heat for 5 minutes, until the cheese melts. Pay attention to the heat at all times, as it is very easy to burn the bottom of the toast (I often burn mine).

Pour out the cooked millet and oatmeal paste, add salt or sugar according to preference, and the whole grain and vegetable breakfast is done. Time to eat.
