Detailed Explanation of the Processing Technology and Production Method of Preserved Plum Ginger

Edible Gardening 0 views
Fresh ginger generally only has a spicy ginger taste and ginger flavor. This product, preserved plum ginger, adds preserved plum flavor to the ginger raw material and belongs to the category of preserved fruit foods. The processing technology is as follows: 1. Raw material: The raw material used for this type of preserved fruit product is semi-finished salted ginger base. 2. Desalting: Soak the salted base in a large amount of clean water and change the water as needed. If flowing water is used, the desalting effect is faster, and it can be used where there is an adequate water source. The degree of desalting depends on the need; generally, leaving about 2% salt in the raw material is sufficient. 3

Fresh ginger generally only has a spicy ginger taste and ginger flavor. This product, preserved plum ginger, adds preserved plum flavor to the ginger raw material and belongs to the category of preserved fruit foods.

The processing technology is as follows:

3. Slicing: Slice according to need. Generally, the slice thickness is 3 mm, and uniform slicing is required.

4. Drying: Dry the ginger slices at 65-70 degrees Celsius until semi-dry for later use.

5. Soaking in sour plum water: In preserved fruit factories, when processing green plums, the sour plum water obtained after salting with table salt has two main flavor characteristics: first, a strong salty taste, and second, a strong sour taste. This sour plum water, which would otherwise be waste, is first filtered, diluted with water if necessary, adjusted for flavor, added with sweetener, and boiled for sterilization. It is used for soaking at a ratio of 1:0.5, that is, 1 part ginger slices to half a part sour plum water. At the same time, add 1/10,000 lemon yellow pigment, or edible red pigment, to dye the ginger slices yellow or red, allowing the ginger slices to fully absorb the sour plum water flavor.

6. Drying: Place the ginger slices at 60-65 degrees Celsius and dry until semi-dry; this is the finished product.

7. Packaging: Small bag packaging, 20-50 grams per bag.

8. The resulting flavor is yellow or red in color, crisp, with salty, sweet, sour, and preserved plum flavors, and also has the spicy flavor of tender ginger. It is a low-cost and popular small snack.
