Ginger is a perennial herbaceous plant of the Zingiberaceae family. It is not only a commonly used traditional Chinese medicinal material, but also an important export vegetable for earning foreign exchange in our country. Because ginger has a wide range of uses and a large demand, and because it prefers warmth and fears cold, and prefers moisture and fears dryness, doing a good job in ginger storage and preservation is especially important.

1. Preparation before storage

Ginger pieces that are plump and thick, free of pests and diseases, free of mechanical damage, and free of bruises should be selected for storage. Before storage, the selected ginger pieces should also be spread out in a thin layer and dried in the sun for 1-2 days to evaporate the surface moisture of the ginger, which is beneficial for storage.

2. Storage methods

1. Cellar storage method: Choose a place with a low groundwater level, good drainage, and solid soil to dig the cellar. A ginger cellar is exactly the same as a sweet potato cellar. The size of the cellar should be suitable for storing 800-1000 kg of ginger. After the cellar is dug, first use straw or mugwort leaves plus 50 g of sulfur to burn and fumigate the cellar. After fumigation, close it for 2-3 days, then open the cellar door, and wait a few days before putting in the ginger to be stored. Each cellar should not be filled too full; 60-70% of the cellar capacity is appropriate. After the ginger is put into the cellar, the temperature and humidity inside the cellar should be adjusted frequently. In the early stage after the ginger is put into the cellar, the cellar door should be opened for ventilation. In the severe winter season, the cellar door should be kept tightly closed, but a window should be left above the cellar door to allow ventilation.

2. Box frame storage method: Use bricks to build a box frame indoors, about 1.5 m high. After it is built, carefully place the strictly selected ginger into it, and cover the top with grass curtains or gunny bags. Generally, the indoor temperature should be controlled between 18-20°C. When the temperature drops, more covering can be added to keep it warm; if the temperature is too high, the covering can be reduced to dissipate heat and lower the temperature.
