Zongzi leaves is the collective term for the plant leaves used to wrap zongzi; it does not refer to one specific plant. As long as a leaf is wide enough, tough enough, able to withstand long boiling, and carries a natural fresh fragrance, it has a chance of becoming a zongzi-wrapping material. During steaming and boiling, zongzi leaves both add fragrance to the glutinous rice and keep out water while holding the shape, making them key to a zongzi's flavor and form.

Common types of zongzi leaves vary by region. In the south, indocalamus leaves (Indocalamus) are most often seen, with broad, flexible, boil-resistant blades that give the cooked zongzi a rich aroma; in the north, reed leaves are usually the main choice, with narrower blades that make smaller zongzi but with a particularly bright fresh fragrance. In addition, lotus leaves, banana leaves,柊 leaves (Phrynium), bamboo shoot sheaths, corn leaves and others are also used to wrap zongzi in some places, each with its own distinctive flavor.

The main reason zongzi leaves are chosen for wrapping zongzi is that these leaves have tightly packed fibers that are not easily damaged and do not readily fall apart or leak even after long boiling. When heated, the fragrant compounds in the leaves slowly seep into the rice grains, giving the zongzi more flavor when eaten, and the used leaves can also degrade naturally, making them relatively eco-friendly.

When selecting zongzi leaves, fresh ones are best if they have natural color, no off odor, and no damage, while dried zongzi leaves should be soaked soft in advance and washed piece by piece. Many people boil the zongzi leaves for a few minutes before wrapping, which both cleans them further and makes the leaves softer so they are less likely to split during wrapping. Be cautious about buying zongzi leaves that are overly bright in color or have a pungent smell, and try to buy through proper channels so you can eat with more peace of mind.
