Sanmen mud crab is a well-known specialty mud crab of Sanmen Bay in Zhejiang.
Sanmen mud crab is the mud crab (Scylla serrata) produced in the Sanmen Bay area of Sanmen County, Taizhou City, Zhejiang Province. It is named after its place of origin and is one of the most representative aquatic specialties of the area. The tidal flats of Sanmen Bay are broad, the water is fertile, and food organisms are abundant. This brackish-water environment where fresh and salt water meet creates favorable conditions for the growth and reproduction of mud crabs, and the area is therefore known as the hometown of Chinese mud crab.
In appearance, the Sanmen mud crab has a blue-green, glossy and hard shell, with serrated front edges on the carapace and thick, strong claws. Its meat is tender and sweet, its roe and hepatopancreas are plump, and its edible proportion is relatively high. It is especially fat and delicious during the gonadal development stage in summer and autumn, making it one of the recognized high-quality mud crab producing areas in China.
In terms of farming, local practices mainly rely on intensive pond culture, often polycultured with razor clams, prawns and other species, using ecological complementarity among different organisms to improve pond utilization efficiency. Daily management requires attention to water quality regulation, scientific feeding and protection during the molting period, as well as prevention and control of common diseases such as ciliate disease. Before being marketed, short-term fattening techniques can also be used to improve the plumpness of the crabs.
Sanmen mud crab has high food value. Steaming preserves its original flavor to the greatest extent, and it is also suitable for stir-frying, soup-making and many other cooking methods. When purchasing, choose individuals that are live and vigorous, with hard shells, full abdomens and intact limbs. Dead crabs are not suitable for consumption. Before cooking, simply scrub the mud and sand from the shell crevices to ensure both flavor and hygiene.
