Black pigs and white pigs are the common names people use for pig breeds with different coat colors. The most obvious difference between the two is coat color and skin. Black pigs have coats that are mainly black over the whole body, with darker skin; white pigs have white or nearly pinkish-white coats, thinner skin, and lighter color. Common Landrace and Large White pigs are typical white pig breeds, while local breeds such as Taihu pigs and Min pigs mostly belong to the black pig category.

In terms of growth performance, white pigs are mostly introduced and bred lean-type breeds. They grow quickly, have high feed conversion rates, and short marketing periods, making them suitable for large-scale intensive farming, but they have relatively high requirements for feed nutrition and daily management. Black pigs are mostly local breeds in our country or their crossbred offspring. They tolerate coarse feed and have strong stress resistance, but their growth rate is relatively slow, their raising period is longer, and their feed returns are relatively lower. In production, ecological farming methods combining pen raising with grazing are often used.

Differences in meat quality attract the most attention. Black pigs have a long growth cycle and more fully deposited intramuscular fat, darker meat color, and evenly distributed fat, with a firm texture and rich aroma; white pigs have a high lean meat rate and thinner backfat, with tender meat and low fat content, making them more suitable for people pursuing a low-fat diet. Because of the different flavors, black pork is mostly aimed at the mid-to-high-end consumer market, while white pork is the main source for ordinary dining tables and processed meat products.

When purchasing, you can distinguish them by meat color, fat thickness, and taste. Black pork is deep red in color, with white fat and clear layers, while white pork is relatively lighter in color. The two types of pigs each have advantages, and there is no absolute good or bad. Farmers can choose suitable breeds based on local market conditions, feed conditions, and management level, while consumers can choose according to flavor preference and budget.
