Atractylodes macrocephala (baizhu) is used medicinally for its rhizome, and is generally harvested in late autumn or early winter of the same year it is planted. When the above-ground stems and leaves of the plant turn yellow and dry and fall off easily, it indicates that the rhizome has matured and harvesting can be arranged. If harvested too early, the rhizome is not yet fully developed and the accumulation of active ingredients is insufficient; if harvested too late, quality may be affected, so the timing must be well judged.

Harvesting should be done on a sunny day. First cut off the above-ground stems and leaves, then dig deep in sequence from one end of the bed, lifting the rhizomes out intact and avoiding cutting or breaking them as much as possible. After digging them out, shake off the soil, remove the fibrous roots and residual stems, discard any individuals with diseased spots or damage, and then move on to the drying and processing stage as soon as possible to prevent spoilage from heat buildup during piling.

Atractylodes macrocephala is mainly processed by oven drying, though sun drying can also be used. When oven drying, the heat should be steady and not too fierce. Generally, when it is half dry, take it out and pile it to soften, allowing the internal moisture to seep outward, then continue drying until completely dry. In this way the finished product is evenly dried inside and out, and is less likely to develop a scorched core or hollow cavities. If sun drying is used, spread it out in a sunny, well-ventilated place and turn it frequently until it is thoroughly dry.

After drying, the best Atractylodes macrocephala is large and firm, with a yellow-white cross-section and a rich aroma. Dry goods should be stored in a dry, ventilated, cool warehouse, with attention to moisture and insect prevention. Check and turn them out to dry regularly, and deal with any dampness promptly, so as to ensure the storage quality of the medicinal material.
