Peanut candy is a traditional Chinese confection made mainly from peanut kernels and sugar, produced through steps such as boiling the syrup, mixing the ingredients, pressing, and cutting into pieces. The finished product is sweet, crisp, and fragrant, with a rich peanut aroma. It is a common tea snack for New Year festivals and wedding celebrations, and it is also the taste of home in many people's memories.

The key to making peanut candy lies in the heat level of the syrup and the handling of the peanuts. The peanuts need to be stir-fried or roasted until crisp and fragrant, then the skins removed and crushed to an appropriate size, which gives the finished product a better texture. When boiling the sugar, white sugar is often combined with maltose; once the syrup reaches the right concentration, the peanuts are quickly poured in and mixed evenly. You must work fast, otherwise the syrup will cool and be difficult to shape.

The home-making process is not complicated. Generally, sugar and water are first melted over low heat, maltose is added to increase stickiness and gloss, and when the syrup can be pulled into threads, the peanuts are poured in and quickly tossed to mix evenly. Then, while still hot, it is poured onto a cutting board or into a mold and pressed flat, and after cooling slightly, cut into small pieces. Be careful to avoid burns during the process, and the candy should also be cut while still warm; if you wait until the candy block has completely cooled, it will easily shatter.

To store peanut candy, place it in an airtight container in a cool, dry place, and avoid it becoming sticky and soft from moisture. If the finished product is too hard, the syrup may have been boiled too long; if it does not set and shape easily, it is mostly because the syrup concentration was insufficient. Master the heat level and the pace of operation, and after trying a few times, you will be able to make peanut candy that is crisp, sweet, and not sticky to the teeth.
