Konjac and Coix Seed Porridge: Low-Calorie and Filling, with a Simple Home-Style Recipe That's Easy to Learn
Konjac and coix seed porridge is a health-promoting porridge made by simmering konjac and coix seed (Job's tears) as the main ingredients. Konjac is rich in glucomannan, is low in calories, and provides a strong feeling of fullness; coix seed is a common traditional grain that contains protein and various minerals. Cooked together, the texture is soft and glutinous with a smooth, slippery quality, and it often appears in the daily menus of people who follow a light-eating diet.
During preparation, because coix seed is fairly hard in texture, it is recommended to soak it for several hours before putting it in the pot; once it has cooked until it splits open, add the cut konjac, then turn to low heat and simmer slowly until the porridge becomes thick. Konjac itself has a mild flavor and readily absorbs the taste of the porridge broth; if you like it sweet, you can add red dates or a small amount of rock sugar, while for a savory version you can cook it with vegetables for seasoning.
When selecting ingredients, you can note that coix seed sold on the market is divided into two types: red coix seed with the hull retained and white coix seed with the hull removed. Red coix seed keeps its outer hull and has a higher dietary fiber content; simply rinse it clean before cooking the porridge. Konjac is mostly seen as block or shred products; after buying it, rinse it clean with water and blanch it briefly to remove the alkaline taste, which also makes the texture fresher.
It should be noted that coix seed has a cool nature, so pregnant women and people with a weak, cold constitution should consult a doctor before eating it; eating too much konjac at one time may cause gastrointestinal discomfort, so an appropriate amount is best. This porridge is suitable as a staple food substitute during a fat-loss period or as a light diet when the seasons change; it is recommended to cook and eat it fresh, as both the flavor and texture are better.
