Green Sichuan pepper is a type of Sichuan pepper, usually referring to the green Sichuan pepper group that turns green when ripe, and it gets its name from its pronounced numbing taste. Compared with the common red Sichuan pepper, its aroma is more crisp and refreshing, and its numbing sensation is stronger and longer lasting, making it one of the important sources of the spicy and numbing flavor of Sichuan cuisine. Fresh green Sichuan pepper is green in color and turns grayish green or brownish green after drying; the oil cells on the surface of the peel are obvious and the smell is pungent.

In terms of classification, green Sichuan pepper is usually discussed in contrast to red Sichuan pepper, and it is mainly produced in Sichuan, Chongqing, Guizhou, Yunnan and other places. Green Sichuan pepper from different producing areas varies slightly in numbing intensity and aroma. The common green Sichuan pepper and tengjiao can both be included in the broad category of green Sichuan pepper, among which tengjiao has a fresher aroma and is often used to make tengjiao oil. When purchasing, choose those with plump granules, raised oil cells, and no mold or off odors.

In cooking, green Sichuan pepper is extremely versatile. It can be used for flash-frying aromatics, braising, and pickling, and can also be made into seasonings such as green Sichuan pepper oil and ground Sichuan pepper. It is indispensable in dishes such as boiled fish, mapo tofu, and spicy numbing hot pot. Its numbing taste comes from the numbing compounds in the peel, and when eaten it brings a slight tingling numbness; combined with chili peppers, it can create a rich, layered spicy and numbing flavor.

In terms of cultivation, green Sichuan pepper trees like sunlight and tolerate drought but fear waterlogging. They are suitable for planting on sunny slopes with deep soil and good drainage, and routine care requires attention to pruning and shaping as well as pest and disease control. For home storage, it is recommended to put dried green Sichuan pepper in a sealed container and keep it in a cool, dry place away from light to avoid moisture and flavor transfer, so that the numbing aroma can be preserved longer.
