Huan Dao Canteen Teams Up with Yan Zhi to Launch an Organic Fukujinzuke Handmade Workshop
Pickling is an ancient wisdom passed down through the ages, used to extend the shelf life of food and also to add different flavors. Using sugar, salt, oil, vinegar or other seasonings to preserve vegetables, fruits or meats, after a period of time they take on a different flavor from the original produce. Different regions have their own vegetables, fruits and spices, and there are many pickling methods, gathering and showcasing the local terroir and cultural characteristics of each place. The taste of pickling is the intersection of heaven, earth and people, a good flavor sealed in time.
Unlike Japan, Korea or northern China, where cold winters make it difficult for vegetables to grow, vegetables and meats need to be preserved through pickling and fermentation to extend their shelf life.
"Taiwan, China's climate and produce are extremely rich, and as each season passes there are the best, sweetest vegetables and fruits, and we use pickling to preserve those flavors." – so says the pickling artisan Yan Zhi Food Company
In winter, root vegetables are abundant, and there are many ways to prepare root vegetables; they are also suitable for pickling. After root vegetables are softened by pickling, they absorb the aroma of the sauce, becoming crisp and appetizing.
Pickling often requires leaving the skin on, so choosing friendly, organic crops makes them more reassuring and healthy to eat~
"Fukujinzuke" originates from Japan and is made by pickling seven kinds of seasonal vegetables in a naturally fragrant and mellow sauce. It has a refreshing taste, whets the appetite and cuts through greasiness, and can also add layers of flavor to food.
Huan Dao Canteen has partnered with Yan Zhi for the "Organic Fukujinzuke" handmade workshop, carefully selecting Leezen organic produce, such as white radish, red radish, lotus root, cucumber, ginger, shiitake mushroom, chayote, yam, burdock, pumpkin and other seasonal vegetables and organic sauces, seven kinds of seasonal vegetables in total. If you want to learn from a pickling artisan how to make a small dish for the Lunar New Year table, or to make it as a Lunar New Year gift, you can sign up~
