Cucumber seeds are the mature seeds of the cucumber, a plant in the Cucurbitaceae family, and they are hidden inside the flesh of the fruit. In young, tender cucumbers the seeds are small and soft; only after the fruit has fully ripened and its skin has turned yellow do the seeds become plump and mature. For this reason, cucumbers grown for seed are usually left on the vine until fully ripe, then cut open to extract the seeds.

In terms of composition, cucumber seeds contain oils, protein, and various minerals such as calcium and magnesium. A common folk way to eat them is to roast them and grind them into powder, then mix the powder with warm water; some people also combine it with grain powders, black sesame powder, and the like as a supplement to their daily diet. These eating methods mostly come from folk experience, and their effects vary from person to person. If you are ill or injured, proper medical diagnosis and treatment should still come first, and dietary therapy should not be used as a substitute for treatment.

When growing them for seed, choose a fully ripe cucumber from a disease-free plant; after cutting it open, let it ferment briefly together with the flesh, then rub and rinse away the sticky material and spread the seeds in a ventilated place to dry. Once the seeds are thoroughly dry, put them in an air-permeable container and store them in a cool, dry place, and they can be used the following year for sowing and raising seedlings. If you are growing a hybrid variety, the offspring of self-saved seed tend to segregate in their traits, so for large-scale cultivation it is generally recommended to buy certified seed.

Whether for eating or for saving as seed, when selecting you should check whether the seeds are dry and plump and whether there is any mold or insect damage. Cucumber seeds that have absorbed moisture and clumped together easily spoil and should no longer be used; cucumber seed powder should also be eaten in moderation, and people with weak digestion should try only a small amount first and decide whether to eat it long term after observing how their body responds.
