Black fungus (wood ear mushroom) is a common edible fungus, named for its ear-like shape and jet-black color. It mostly grows on dead wood or artificial mushroom sticks and thrives in humid, mild environments, and it is cultivated on a large scale in many producing regions. It has a crisp, tender texture and is rich in gelatinous substance; whether served cold, quickly stir-fried or simmered in soup, it is a classic ingredient on the dining table.

From a nutritional standpoint, black fungus is notable for its dietary fiber and polysaccharides, and it also contains minerals such as iron and calcium, while being low in calories. Its abundant fiber provides a feeling of fullness and helps with intestinal peristalsis, so it is often regarded as an ingredient suitable for people managing their weight. However, it is an ordinary food, and specific health benefits may only be claimed after proper certification, so there is no need to glorify it excessively.

Dried products are most common on the market. To rehydrate them, simply use cool or warm water, and the soaking time should not be too long, especially in summer, as prolonged soaking at room temperature easily breeds microorganisms. After soaking, trim off the root and impurities, blanch in water and then cook for a cleaner, crisper texture. Stir-frying it with shredded ginger, vinegar or green vegetables gives a refreshing flavor that is not greasy.

One thing to note is that black fungus fiber is rather coarse, so the elderly and young children who have difficulty chewing and swallowing should have it chopped and cooked until soft before eating, and those with weak digestive function should not eat too much at one time. Only by treating it as one part of a balanced diet and pairing it in moderation can you truly eat with peace of mind and good health.
