The benefits and effects of cowpeas are diverse, and both their nutritional value and ways to eat them are worth learning about.
Cowpeas (Vigna unguiculata subsp. sesquipedalis) are a common legume vegetable in summer, also known among the public as long beans and yardlong beans, and they are widely grown across both northern and southern parts of our country. Their pods are slender with crisp, tender flesh; they can be stir-fried plain, served cold with dressing, or blanched and then dried to make dried beans, making them a very frequently appearing ingredient on the dining table.
From a nutritional perspective, cowpeas contain dietary fiber, B vitamins, vitamin C, and various minerals such as potassium, calcium, and iron, with low fat content and not many calories. The dietary fiber in them helps promote intestinal peristalsis and is somewhat helpful for maintaining normal bowel movements; their plant protein is also relatively prominent among vegetables, making them suitable for eating with staple foods in daily meals. Traditional Chinese medicine, meanwhile, considers cowpeas to be neutral in nature and sweet in taste, with a saying that they strengthen the spleen and boost qi, and they are often regarded as a mild tonic ingredient.
It should be noted that cowpeas should not be eaten raw or half-cooked. Unripe legume vegetables may contain natural substances such as saponins, which can easily cause gastrointestinal discomfort, so they should be thoroughly heated until fully cooked during preparation. In addition, people who are prone to bloating should not eat too much at one time, to avoid increasing the digestive burden.
When selecting cowpeas, those with plump pods, bright green color, and no spots or insect holes on the surface are best. Because cowpeas may have pesticide residue issues during cultivation, it is recommended to buy them through proper channels, and before cooking, soak and rinse them thoroughly with clean water to remove surface impurities before putting them in the pan. Only with reasonable washing and thorough heating can you enjoy the nutrition and deliciousness of cowpeas with more peace of mind.
