Water bamboo is a perennial aquatic herb in the grass family, genus Zizania, and the part people eat is its swollen young stem. This young stem becomes white and plump because it is stimulated by parasitism from a smut fungus, and its shape somewhat resembles a bamboo shoot, so among ordinary people it is also often called water bamboo shoot or water shoot. Water bamboo likes warm, humid environments and is mostly cultivated in shallow paddy fields or along swamps, and it is a very common aquatic vegetable in southern China.

In appearance, water bamboo is spindle-shaped, with the outer layer wrapped in green leaf sheaths; once peeled, the flesh is white and delicate, crisp and tender with a fresh sweetness, carrying a faint fragrance of aquatic plants. It can generally be harvested in two seasons a year, summer and autumn. Fresh water bamboo has a high water content and does not keep long, so after buying it you should eat it as soon as possible to avoid the fibers becoming coarse and the flavor fading.

In terms of cultivation and management, water bamboo is mostly propagated by division of tillers, and the field needs to maintain a suitable water level, along with fertilization, weeding and pest and disease control. In recent years many production areas have tried a co-culture model of water bamboo and fish, letting the fish help eat harmful organisms such as apple snails, achieving two harvests from one field; some small farmers also adopt organic cultivation and methods such as reducing nighttime light interference, balancing ecological balance with crop quality.

As for eating, water bamboo can be prepared in many ways: shredded and stir-fried, cut into chunks and boiled in soup, or braised with shredded meat or shrimp are all very suitable. When selecting it, one with a well-proportioned, plump body and a white cross-section without black spots is best; if the inside is black or hollow, it is mostly already old and the texture will be greatly reduced. It should be noted that although water bamboo has "shoot" in its name, it is not related by blood to bamboo shoots; it only got this name because its appearance and texture are similar.
