Proven Preservation Methods for Edible Mushrooms

Sodium chloride (table salt) preservation: Freshly harvested oyster mushrooms, Phoenix-tail mushrooms (Pleurotus pulmonarius) and similar varieties are trimmed, dipped in 0.6% salt water for about 10 minutes, removed and drained, then packed into plastic bags for storage; they can be kept fresh for 5 to 8 days.

Rice-water film preservation: Add 1% sodium carbonate or 5% baking soda to rice water, stir well, and cool to room temperature. Dip freshly picked mushrooms in the rice water, remove after 5 minutes, and dry them in a cool, shaded, well-ventilated place. A thin film of rice water forms on the mushroom surface, which blocks air and generally keeps them fresh for 2 to 3 days.

Ascorbic acid solution preservation: Spray freshly harvested enoki mushrooms (Flammulina velutipes), shiitake mushrooms and straw mushrooms with a 0.1% ascorbic acid solution, then place them in non-iron containers; they can be kept fresh for 3 to 5 days.

Sodium chloride and calcium chloride mixed solution preservation: Prepare a mixed solution of 0.2% sodium chloride plus 0.1% calcium chloride, soak freshly harvested mushrooms in it, cover them with a bamboo mat, and place a weight on the mat so the mushrooms stay below the liquid surface; remove after 30 minutes. Treated mushrooms can be kept fresh for about 5 days at 15°C to 25°C and about 10 days at 5°C to 10°C.

Maifan stone preservation: Place fresh straw mushrooms in a plastic box, submerge them in maifan stone water, and store in a low-temperature environment below 0°C; the freshness period can reach 70 days, their amino acid content shows no obvious difference from fresh mushrooms, and the color and taste are both good.
