Elders often say that you cannot judge a person by their appearance, and in fact this is true of most things; many foods that look unremarkable actually contain all sorts of nutrients we know nothing about. People eat all kinds of grains and inevitably fall ill, but we can use these foods with special nutrients to make our bodies healthier.

Take this tiny enoki mushroom, for example.

Actually, at first I was quite averse to it. Why? Haha, it is a little embarrassing to say. My teeth were not very good when I was little, and every time I ate enoki mushrooms, they would get stuck between my teeth; my fingers could not pull them out and a toothpick could not dig them out. Whenever enoki mushrooms were on the table, they would annoy me no end, so I simply banished this unwelcome thing from my dining table.

But dislike it as I may, I still have to mention the benefits of enoki mushrooms. Enoki mushrooms are very rich in amino acids, more so than ordinary mushrooms, and their lysine content in particular is especially high; lysine helps promote children's intellectual development. Dried enoki mushrooms contain 8.87% protein, 60.2% carbohydrates and 7.4% crude fiber, and regular consumption can help prevent and treat ulcer disease.

Research has also shown that a substance contained in enoki mushrooms has a good anti-cancer effect. So enoki mushrooms are both a delicious food and a fairly good health food. Since they are so nutritious and not expensive either, if your teeth are better than mine, then you really must eat more of them.

Ingredients: one cluster of enoki mushrooms, an appropriate amount of oil, an appropriate amount of salt, an appropriate amount of chili powder, an appropriate amount of cornstarch, an appropriate amount of pepper powder, an appropriate amount of Sichuan peppercorn powder.

Steps:

Take the whole cluster of enoki mushrooms out of the packaging; there is no need to separate them, just rinse the whole cluster clean under the tap.

Cut off the root end with a knife and let the mushrooms dry for later use.

Bring a pot of water to a boil and blanch the enoki mushrooms until soft.

While blanching the enoki mushrooms, prepare the seasoning: mix oil, salt, pepper powder, chili powder, light soy sauce and Sichuan peppercorn powder together.

Drain the blanched enoki mushrooms and arrange them on a plate.

Pour the prepared sauce over them and it is ready to serve.

If you like to eat them hot, you can put the enoki mushrooms into a pan and pour in the sauce while heating, stirring to combine.
