What are the methods for storing and preserving mushrooms?
The main factors affecting mushroom preservation are as follows:
Temperature: the higher the temperature, the worse the preservation of mushrooms. 0-4°C is the suitable temperature for mushroom preservation. Apart from quick freezing, temperatures below 0°C can easily cause freezing damage.
Water quality: when the iron or copper content in water exceeds 2 mg/L, the color of mushrooms darkens and turns brown, so iron and copper utensils and tools are prohibited.
Humidity: 95-100% is required. Below 90%, the color darkens and the caps tend to open and spoil.
Gas composition: an important cause of spoilage, which can be suppressed by sterilization and adjusting the pH value.
Enzyme activity: polyphenol oxidase is the main cause of browning in mushrooms.
1. Modified atmosphere preservation: using 0.05 mm thick PE bags treated with a special physical method, simple modified atmosphere temperature preservation of mushrooms shows that with simple modified atmosphere storage, within 3-5 days the mushrooms remain fresh and tender with caps unopened, basically without browning, and the water loss rate is below 1%. At present, using Baileyuan mushroom-specific physical preservation bags with strong air permeability for packaging, maintaining an oxygen concentration of 1% and a carbon dioxide concentration of 10-15% inside the bag, can keep mushrooms white and fresh for 5-8 days, with good freshness.
2. Refrigerated preservation: low temperature can keep mushrooms fresh and high quality. During storage and transportation, maintaining a temperature of 0-3°C and a relative humidity of 90-95% is optimal. Packaging with Baileyuan mushroom-specific preservation bags can also extend the preservation period, keeping them fresh and tender with bright color.
