In order to extend the storage period of mushrooms, maintain their quality, color and flavor, and improve the cultivation benefits of mushrooms, the preservation techniques for mushrooms are introduced below. Mushroom growers can choose and apply them according to their own actual conditions. 1. Low-temperature preservation method. In order to extend the storage period of mushrooms, maintain their quality, color and flavor, and improve the cultivation benefits of mushrooms, the preservation techniques for mushrooms are introduced below. Mushroom growers can choose and apply them according to their own actual conditions.

1. Low-temperature preservation method

Practice has proved that low temperature can keep mushrooms fresh and of good quality. The method is: after mushrooms are harvested, their humidity is 90-95%; at this time, storing the mushrooms at 0-3°C can achieve the purpose of preservation. It is worth noting that during the preservation period, the temperature and humidity of the mushrooms should be kept relatively stable, and should not be variable or change suddenly.

2. Quick-freezing preservation method

Add 0.3% citric acid to 100°C boiling water (either volume ratio or mass ratio is acceptable), then put 15 kg of fresh mushrooms into every 100 kg of boiling water at one time, blanch for 90-150 seconds, and stir constantly so that the mushroom bodies are heated evenly. When the surface of the mushroom bodies turns light yellow, is elastic and glossy, and is cooked but not mushy, remove them. After blanching, the fresh mushrooms should be promptly rinsed with cold water at 10-20°C, then moved into a flowing cold water pool at 3-5°C to continue cooling, and after cooling, sent to a cold storage warehouse for storage. If the temperature of the cold storage warehouse is kept below -18°C, the original quality and flavor of button mushrooms can be maintained for a long time.

3. Controlled atmosphere preservation method

At room temperature, using breathable plastic bags for packaging, with oxygen inside the bag controlled at about 1% and carbon dioxide controlled at 10-15%, button mushrooms can remain fresh in color and of excellent quality for one week. It is worth noting that this method is only suitable for a small amount of temporary storage and cannot be used for large-volume storage, in order to prevent mold and losses.
