Detailed Explanation of Key Points of Controlled Atmosphere Preservation Technology for Mushrooms

1. Harvesting: Harvest when the fruiting bodies have fully grown and their volume has increased noticeably. If harvested too early, the mushrooms will be of poor quality and the yield will be reduced; if harvested too late, the fruiting bodies are more likely to age, open their caps, and change color. During harvesting, mechanical damage should be reduced, and harvesting tools and packaging containers should be cleaned and disinfected. 2. Pre-storage treatment: After the mushrooms are harvested, trim off the mushroom stems. If the mushrooms have yellowed or turned brown, rinse them in a 0.5% citric acid solution for 10 minutes, remove them and drain off the water droplets, then quickly pre-cool the mushrooms. Pre-cooling is very important. Because at higher temperatures, it will accelerate

2. Pre-storage treatment

After the mushrooms are harvested, trim off the mushroom stems. If the mushrooms have yellowed or turned brown, rinse them in a 0.5% citric acid solution for 10 minutes, remove them and drain off the water droplets, then quickly pre-cool the mushrooms. Pre-cooling is very important. Because at higher temperatures, it will accelerate nutrient consumption, aging, and browning reactions.

3. Low-temperature controlled atmosphere storage

Put the pre-cooled mushrooms into storage bags made of 0.025 cm thick polyethylene plastic film, with each storage bag holding 1 kg of fresh mushrooms. After sealing the bag opening, place the mushrooms in a cold storage room for storage, lower the mushroom body temperature to 0-3°C within 4-5 hours, and maintain a relative humidity of 95%-100%. Mushrooms store well when the oxygen concentration is 1% and the carbon dioxide concentration is 10%-15%, and the mushroom bodies remain white in color with very few opened caps. When the mushrooms are first put into storage, the temperature is above 10°C and respiration is vigorous. Therefore, while the temperature is being lowered after being put into storage, that is, within 4-5 hours, the oxygen concentration in the storage bag can be lowered to below 3%, and the carbon dioxide concentration can rise to above 10%. When the temperature drops to the suitable storage temperature for mushrooms of 0-3°C, respiration weakens, and after 1 day, the oxygen concentration in the bag reaches 1% and the carbon dioxide concentration is 13%. At this time, use a fine needle to prick a small hole in the bag, which can basically maintain the ratio of oxygen and carbon dioxide concentrations. In subsequent management, humidification measures should be taken for the cold storage room to ensure that the relative humidity in the bag remains above 95%.
