Many Methods for Preserving Edible Mushrooms: Master the Techniques to Extend Storage Life

Salt preservation: Freshly harvested oyster mushrooms, Phoenix-tail mushrooms and the like, after being cleaned up, are soaked in 0.6% salt water for about 10 minutes, then taken out, drained and stored in plastic bags, keeping fresh for 5-8 days. Rice-water film preservation: Add 1% soda ash or 5% baking soda to rice water, stir well, and cool to room temperature. Soak freshly picked mushrooms in the rice water, take them out after 5 minutes, and dry them in a cool, dry place; by then a thin film of rice water will form on the surface of the mushrooms, which can isolate air, and the mushrooms can generally keep fresh for 2-3 days. Ascorbic acid solution preservation: Spray a 0.1% ascorbic acid solution on freshly harvested golden needle mushrooms (enoki), shiitake mushrooms, straw mushrooms and the like, then put them into non-iron containers, keeping them fresh for 3-5 days.

Sodium chloride and calcium chloride mixed solution preservation: Prepare a mixed solution with 0.2% sodium chloride plus 0.1% calcium chloride, soak freshly harvested fresh mushrooms in it, and cover them with a bamboo mat, pressing a heavy object on the bamboo mat so that the mushroom bodies are submerged below the liquid surface, then take them out after 30 minutes. The treated mushrooms can keep fresh for about 5 days at 15-25°C and about 10 days at 5-10°C.

Medical stone preservation: Put fresh straw mushrooms into plastic boxes, submerge the mushroom bodies with medical stone water, and store them in a low-temperature environment below 0°C; the freshness period can reach 70 days, their amino acid content shows no obvious difference from fresh mushrooms, and the color and taste are good.
