Detailed Explanation of the Processing Technology and Production Methods of Crude Tea
The crude tea processing procedure is a process of repeated operations of sifting, cutting, selecting, picking, and pan-firing. The ordering of each process, the number of repetitions, and so on must all follow certain principles.
1. Sift first, then winnow. Winnowing mainly separates the light and heavy tea leaves and distinguishes superior from inferior quality. Only when the tea material is the same in length, size, and thickness can the light and heavy be separated most effectively and superior from inferior quality be distinguished clearly. Therefore, before winnowing, sifting must be carried out first.
2. Re-fire first, then cut. Generally, the head tea on the sieve surface consists of large, long, coarse, and loose tea heads. They are first re-fired so that the head tea shrinks and becomes crisp and dry, making it easier to cut and improving work efficiency. If the head tea contains too much moisture and is not re-fired, it will be difficult to cut.
3. Re-fire first, then fine-select. Tea material varies in the hardness of its body, which not only makes it very difficult to distinguish the quality of the tea leaves but also easily leads to material loss and reduced economic income. Therefore, only when the moisture content of the tea material is uniform, and after sifting, material extraction, winnowing, and grading, can the goals of fine-selecting the tea material, clearly distinguishing superior from inferior quality, and extracting and grading materials be achieved.
4. Sift and winnow first, then pick and remove. Picking and removing is the most labor-intensive operation in the crude tea processing procedure. In order to improve the efficiency of machine picking and removing, reduce the picking and removing workload as much as possible, and achieve the goal of pure quality, the tea material must first undergo sifting and winnowing so that it is basically uniform and consistent, and then undergo picking and removing. In this way, the efficiency of machine picking and removing can be fully brought into play, the workload of manual picking and removing can be reduced, and the quality requirements of picking and removing can be met.
The crude tea processing procedure refers to the overall production line from crude tea to refined tea, passing through each operation. It is customarily called the sifting route or sifting procedure, and is also called the production procedure. At present, some tea factories adopt the method of rounding first and then shaking, while others adopt the method of shaking first and then rounding. The process flow is much simpler than the former.
