Oyster mushroom (Pleurotus geesteranus)
Taxonomically, the oyster mushroom belongs to the phylum Fungi, class Basidiomycetes, order Agaricales, family Pleurotaceae, genus Pleurotus. Its name originates from Taiwan, China. It differs from the common Phoenix mushroom in that it is smaller, with a stem of 5-6 cm and a cap diameter<3厘米,秀珍菇其实是一个商业味比较浓厚的凤尾菇名称。
Nutritional value
The oyster mushroom is not only rich in nutrients but also delicious. Its protein content is higher than that of the button mushroom, shiitake, and straw mushroom, and its texture is tender with low fiber content. According to measurements by the Institute of Soil and Fertilizer, Fujian Academy of Agricultural Sciences, the fresh mushroom contains 3.65-3.88% protein, 1.13-1.18% crude fat, 0.87-1.80% reducing sugar, 23.94-34.87% sugar, 2.64% lignin, 12.85% cellulose, and 0.14% pectin, and also contains cellulose, minerals, and other substances. Its protein content is close to that of meat, 3-6 times higher than that of ordinary vegetables. The oyster mushroom contains more than 17 kinds of amino acids, and even more valuable is that it contains threonine, lysine, leucine, and others that the human body cannot produce itself and that are usually lacking in the diet. It can be seen that the oyster mushroom is a high-protein, low-fat nutritional food. It is delicious and has a unique flavor, and is aptly called the "MSG mushroom."
