The Nuodeng black pig is a local black-haired pig mainly raised in Nuodeng Town and the surrounding mountainous areas of Yunlong County, Dali Bai Autonomous Prefecture, Yunnan Province. It takes its name from the area where it is produced, around the historic Bai village of Nuodeng. The local terrain features high mountains and deep valleys with pronounced vertical climatic variation, and this pig has long reproduced in the mountain environment, gradually developing characteristics suited to mountain raising. In appearance, the Nuodeng black pig is mostly black-haired, medium in size, and sturdy in constitution. It tolerates coarse feed well, shows good adaptability and disease resistance, and is suited to a raising method that combines grazing with barn feeding. Its meat is usually tender and firm with a rich aroma and relatively abundant intramuscular fat, making it an important raw material for producing traditional Nuodeng ham; the flavor of the ham is closely related to the quality of the source pig. In terms of feeding management, local farmers mostly follow the traditional model of free-range grazing plus supplementary feeding. The pigs move about in mountain forests and fields during the day, eating green forage, and are given supplementary farm feeds such as corn, beans, and bran in the morning and evening. Because the growth cycle is relatively long, the time to market is generally later than that of ordinary commercial pigs, but this favors the accumulation of flavor. For farmers, raising Nuodeng black pigs can be combined with ham processing, rural tourism, and other industries to form a relatively complete specialty chain and improve farming returns. At the same time, maintaining pen hygiene, carrying out regular epidemic prevention and disinfection, and standardizing the management of introduced breeding stock are the foundation for ensuring herd health and meat quality, and these must be maintained over the long term.
