The potato, also known as the Irish potato, yam and earth egg, is an annual herbaceous plant of the genus Solanum in the family Solanaceae. Its edible organ is the underground tuber, and it is one of the world's important food crops. It originated in the Andean region of South America, and today it is widely cultivated throughout our country. It is both a common home-cooked vegetable and an important supplement to staple foods.

Potato tubers are rich in starch and also contain protein, vitamin C, potassium and many other nutrients. They store well and can be prepared in many ways - stir-fried, boiled, steamed or fried - and are deeply loved by the public. The plant prefers a cool climate, and the tuber enlargement stage is relatively sensitive to temperature and moisture; high temperatures are not conducive to tuber formation.

By use, varieties can be divided into fresh-eating types, starch-processing types and frying-processing types. By skin and flesh color, there are also yellow-skinned yellow-fleshed, white-skinned white-fleshed, as well as red-skinned and purple-skinned types. Different varieties have different growth period lengths, so when planting, suitable varieties should be selected according to local climatic conditions and market demand.

In cultivation, virus-free seed potatoes are mostly cut into pieces and sown. Attention should be paid to crop rotation to avoid continuous cropping with Solanaceae crops, and water and fertilizer management and earthing up should be done well during the growing period. Common problems in production, such as late blight, mosaic disease, ring rot, hollow heart and rotting, are mostly related to seed potato quality, field humidity and storage conditions, and need to be prevented in advance. Mastering scientific planting and storage methods helps to increase yield and cultivation efficiency.
