The wolf-tooth goby, also known as the red wolf-tooth goby (Odontamblyopus rubicundus), is a particularly distinctive-looking species among the gobies, mainly found in the brackish waters of coastal and estuarine areas. Its body is slender and almost eel-shaped, with a broad, flat head and eyes that are greatly reduced in size. Its most striking feature is a row of sharp, outward-protruding teeth in its mouth that resemble wolf fangs, which is how it got its name. Its body color is mostly red or purplish-red, and its skin is smooth, so at a glance it is easily confused with eels.

This fish is a typical bottom-dwelling species, usually inhabiting muddy tidal flats, where it is good at digging burrows to live in. At high tide it emerges from its burrow to move about and forage, and at low tide it hides inside the burrow. Its diet leans toward carnivory, feeding mainly on small fish and shrimp, shellfish, and other benthic invertebrates, making it a common small predator in the estuarine tidal-flat ecosystem.

As for whether it can be eaten, the wolf-tooth goby is edible, with tender flesh, and in many coastal areas it is a common ingredient on the dining table, often used in braised dishes, soups, or dried into fish jerky. However, it is relatively small in size and has many fine intermuscular bones, so it needs careful handling before eating, and care should be taken to remove them during cooking so as not to affect the texture.

At present, wolf-tooth gobies on the market mostly come from offshore fishing, with artificial farming being relatively rare, and supply often varies with the season and fishing runs. Because it lives in estuarine tidal-flat environments, when purchasing you should pay attention to whether the source waters are clean, and after buying, process it as soon as possible and cook it thoroughly with sufficient heat, so that it is safer to eat.
