Shiitake mushroom prices are generally higher than those of ordinary shiitake, and quality grade is the key
Huagu, or flower shiitake, is a premium type of shiitake, named for the natural white cracks that form on the surface of the cap under conditions of low temperature, dryness, and large day-night temperature differences. The conditions required for these patterns to form are demanding and yields are relatively limited, so flower shiitake prices are generally higher than those of ordinary shiitake, making it a category that draws considerable attention among dried edible fungi.
The main factors affecting flower shiitake prices include quality grade, place of origin, size specification, and marketing season. Generally, the thicker and fleshier the cap, the whiter and deeper the cracks, and the more complete the fruit body shape, the higher the grade and the more expensive the selling price. Climate conditions in different producing areas and the harvest situation in a given year can also cause market prices to fluctuate within a certain range.
Domestic flower shiitake producing areas are relatively concentrated in major shiitake regions such as Henan, Fujian, Hubei, and Zhejiang, and most of what is sold on the market is dried, with some also sold fresh. Flower shiitake is often graded by size and the depth of the patterns, with common types including white flower shiitake, tea flower shiitake, and dark flower shiitake; those with pure white patterns and deep, dense cracks rank highest. When selecting, you can check whether the cap is thick and substantial, whether the patterns are clear, and whether the gills are intact, then smell it to see if it has mushroom aroma or a musty odor.
Flower shiitake has thick, substantial flesh and, after soaking, a smooth, springy texture, making it suitable for many cooking methods such as stewing soup, braising, and steaming. Dried flower shiitake bought at home should be sealed and stored in a cool, dry place to avoid moisture and insects, so that its quality and appearance matching its grade can be maintained over the long term.
