Analysis of Factors Influencing Yangtze River saury prices and market trends after the fishing ban
The Yangtze River saury is a well-known migratory fish of the Yangtze River basin, and together with hilsa herring and pufferfish it is known as one of the three delicacies of the Yangtze. Because its flesh is tender and its flavor delicious, it has long been regarded as a seasonal spring delicacy, and its market price has always attracted much attention. Every year around Qingming, when it comes onto the market, the saury market always becomes a hot topic in the aquatic products trade.
The reason the price of Yangtze River saury remains so high comes down chiefly to the scarcity of the resource. Affected by multiple factors such as overfishing and changes in the aquatic environment, the number of wild saury at one point declined markedly, and catches fell year by year; tight supply directly pushed up market prices. At their peak, prices for wild Yangtze River saury far exceeded those of ordinary freshwater fish, reaching levels that ordinary aquatic products could hardly match.
Policy changes have had a particularly obvious effect on prices. As fishing is banned in key waters of the Yangtze River basin, licensed fishing has been withdrawn, and genuine wild Yangtze River saury no longer enters market circulation. What is commonly seen on the market now is mostly sea saury, lake saury and farmed saury; the cost and selling price of these substitutes are considerably lower than those of the wild Yangtze saury of those years, and the market is relatively stable.
Factors affecting saury prices also include size, fatness, timing of market arrival and place of origin. Generally speaking, larger individuals with plump flesh are more favored; before Qingming the bones are soft and the taste is at its best, so prices tend to be higher. When buying, consumers should pay attention to distinguishing wild from farmed, and Yangtze saury from other saury, and choose products from legitimate sources, so as to avoid paying a high price for fish that does not live up to its name.
