Toxic ginger refers to ginger contaminated by harmful substances during cultivation, storage, or processing. Common cases include the illegal use of highly toxic pesticides, fumigation with sulfur to keep it fresh, and ginger that has rotted or spoiled. This kind of ginger may look little different from ordinary ginger on the outside, but eating it may pose health risks, so it has long been a focus of consumer concern.

In terms of origin, toxic ginger mainly falls into several types. The first is ginger with excessive pesticide residues, mostly caused by the overuse of pesticides during cultivation, leaving harmful components inside the ginger rhizome; the second is sulfur-fumigated ginger, which looks bright in color and attractive after fumigation but may retain substances such as sulfur dioxide; the third is rotten ginger, which may produce harmful components such as safrole after molding and spoiling -- even if the bad part is cut off, the remaining part may already be affected.

When selecting ginger, you can start from several aspects. Normal ginger has a rough skin, a yellowish and somewhat uneven color, and a strong, pungent ginger aroma; sulfur-fumigated ginger often has a pale, bright color and smooth skin, and may give off a pungent or sour odor when smelled up close. Break open the ginger rhizome and observe: fresh ginger has clear fibers on the cut surface and plenty of juice, while ginger that has been treated or stored too long is soft in texture and crumbles with a single twist of the hand.

For everyday prevention, it is advisable to buy ginger with a clear source through proper channels, wash it thoroughly before eating, and peel it when necessary to reduce surface residues. When storing, keep it in a cool, ventilated, and dry place. Once mold or rot is found, it is best to discard the whole piece rather than cut off the bad part and continue eating it. If obvious discomfort occurs after accidentally eating it, seek medical attention promptly.
