When it comes to shiitake mushrooms, I'm sure everyone is familiar with them. As an edible fungus, they are prized for their delicious taste, delightful aroma and rich nutrition, and are a common dish on people's dinner tables. Although many people love eating shiitake mushrooms, few have actually seen them growing. Now, let's follow our reporter to a shiitake mushroom farming base in Matang, Rudong, to find out.

In the greenhouses of the mushroom farming base in Matang Town, Rudong, a large crop of shiitake mushrooms is being cultivated. According to the person in charge, these shiitake mushrooms take nine months from cultivation to full maturity, and their growing process has fairly high requirements for temperature and humidity.

In 2015, Cai Shiyu and a friend invested 50 million yuan to rent more than 130 mu of land in Matang, Rudong, and planted about one million pounds of shiitake mushrooms. Cai Shiyu, head of the shiitake mushroom farming base in Matang Town, Rudong County, said he got into shiitake mushrooms because a friend's hometown is Gutian in Fujian, which is the hometown of edible fungi. The public's demand for green food on the dinner table is growing, and edible fungi are a green product. The main raw materials of shiitake mushrooms are sawdust and bran, with no other additives. After the raw materials for the mushroom sticks arrive, a stick is made, then sterilized under high temperature and high pressure, and after sterilization it is inoculated under sealed, sterile normal conditions, with no other fungal infection nearby.

Shiitake mushrooms have a fragrant, smooth and delicious taste and are rich in nutrition, making them one of people's favorite edible fungi. Cai Shiyu said that most people, when buying shiitake mushrooms, pick the big ones, but actually the big ones are not the best; basically, shiitake mushrooms with a round cap of about 5 cm are better. You also need to look at how open the cap is; if it is opened too wide, that means it is starting to get old. Cai Shiyu told us that the shiitake mushroom base has 20 production sheds, can produce 7 million jin a year, with a profit of about 2 yuan per jin, and can recover the cost in three years. The market sales prospects for shiitake mushrooms are fairly good. At present, the output of shiitake mushrooms is far from enough for the Shanghai market, and basically the distributors come to transport them themselves.
