Plain Shrimp
Ingredients and formula: 100 kg dried tofu (6 mm thick), 20 kg flour, 10 kg shrimp oil, 0.2 kg monosodium glutamate (MSG), 0.5 kg minced ginger
Production method
1. Cutting into strips: Cut the semi-finished product into lengths of 40 mm long, 3 mm wide, and 6 mm thick. For large-scale production, cut by machine; for small quantities, cut by hand, and it can also be cut into thick and thin ends.
2. Frying the blanks: Put the cut semi-finished product into the oil pot and fry. The oil temperature should not be high (about 110°C). Use a strainer to stir frequently. Do not fry it through, and even more do not fry it burnt. Remove from the pot once it has a bit of bite, because it still needs to be fried a second time.
3. Seasoning: Mix the auxiliary ingredients with a small amount of water into a flour batter, pour it into the fried blanks, and stir so that the batter completely sticks to the blanks. Note that if there is not enough, it will not stick, and once it goes into the oil pot and is fried, the coating will fall off.
4. Frying the finished product: The oil temperature is slightly higher than the first time (about 120-130°C). Put the blanks fully coated with flour particles into the oil pot and fry. Fry until golden and remove from the pot; this is the finished product. It has a shrimp flavor, is fragrant and crisp, and is delicious.
