Brief Introduction to the Processing Technology of Fish Chikuwa
Fish rolls (fish chikuwa) are a type of surimi product. They were rarely seen on the Chinese market in the past; they are a product introduced from Japan. In Japan, grilled fish rolls are called "chikuwa", and fish meat rolls are called "Date-maki". They can be eaten directly, or cut into slices and processed into other fancy varieties or eaten as a side dish. Nowadays this kind of aquatic processed product is sold in large supermarkets across China.
1. Process flow
Surimi -> grinding and kneading -> forming -> grilling.
2. Main steps
1. The production of the raw surimi is the same as for other surimi products. The quality requirements for the raw fish are not high; all kinds of edible fish can be used as raw material.
2. Formula The basic reference formula for fish rolls is as follows: fish meat 50 kg; starch 2.5-3.5 kg; salt 500-700 g; granulated sugar 850-1000 g; monosodium glutamate 85-100 g; yellow rice wine 500 g; spice powder 30 g.
3. Forming and grilling If produced by hand, the seasoned and kneaded surimi can be applied and shaped by hand onto the outside of a specially made copper tube, so that it takes a cylindrical shape. It is required to be uniform in thickness and complete in appearance, and then it is passed into a baking oven for grilling. After grilling, the copper tube is pulled out, and it becomes a hollow circular fish roll. If the scale needs to be expanded, a Japanese-style fish roll machine can be used for continuous mechanical production.
3. Sensory quality requirements
Golden yellow in color, complete in shape, rich in elasticity, fresh, fragrant and delicious.
