Brew Longjing tea with boiling water; after 1 minute, pour off part of the tea liquid, and set aside the tea leaves and the remaining tea liquid. Heat a wok over medium heat and pour in lard. Then pour the shrimp back into the wok, add the remaining tea leaves and tea liquid, then spray in Shaoxing wine, stir-fry several times, and remove from the wok to plate. In this dish, the shrimp are jade white, fresh and tender, and the tea leaves are emerald green and fragrant, making it very refreshing.
