Excessively high nitrate content in vegetables can cause direct harm to the human body, and what is more dangerous is that nitrate is very easily reduced to nitrite under the action of microorganisms. Nitrite is a toxic substance; it can directly cause poisoning and oxygen deprivation in people, and in severe cases can lead to death. Nitrite can also combine with secondary amines in the human digestive tract to form the strongly carcinogenic substance nitrosamine. Therefore, the nitrate content in vegetables must be strictly controlled to ensure the safety of consumers. The application rate of high-quality farmyard manure in vegetable fields should be controlled at 3000-5000 kg per mu, and generally should not exceed 6000 kg per mu.
