When to Pick Sapodilla? Learn to Tell Ripeness by Color
Sapodilla is a fruit unlike other fruits, and its growth cycle is very special. A sapodilla tree can flower several times a year and bear fruit multiple times. This also makes harvesting somewhat difficult, because the fruits develop at fairly different times, but the usual harvest period is from September to October.

Generally, when picking, you can see whether the fruit has grown fairly large. If it is large enough, it can be picked. It does not matter if it is a bit hard. Put it in a plastic storage bag for a few days, then press it with your finger; if you find it has softened a little, it is ready to eat and very sweet. If you want to leave it on the tree, usually a small bird will discover it before you do. Since a period is still needed from harvest to softening, it can be stored and transported to supply the market.
When the fruit is fully developed, the skin turns yellowish brown, the flesh is white with a green tinge, and the milky latex flowing from a cut fruit stalk decreases, but the flesh is still hard, so it can also be harvested. How do you tell when sapodilla is ripe? When sapodilla is ripe, it is like a persimmon: it feels soft when squeezed by hand. That is, you judge by how soft or hard the sapodilla is.
