Cumin lamb is a famous Xinjiang dish, beloved for its rich, savory flavor
Cumin lamb is a traditional dish made with lamb as the main ingredient and cumin as its signature seasoning. It is usually classified as a Xinjiang dish, is widely spread across the northwestern regions, and is now common in restaurants and on family tables all over the country. It is closely tied to the local nomadic food tradition: pastoral areas are rich in lamb, and cumin can effectively mask the gamy odor of lamb, so the pairing gradually developed into a fixed preparation.
The dish is characterized by a strong aroma and a salty, spicy flavor. Cumin develops a prominent fragrance after being dry-roasted in a wok or bloomed in hot oil, and it blends with the rich fat of the lamb, filling the mouth with a toasted aroma. When cooking, relatively tender cuts such as leg of lamb or tenderloin are generally chosen; they are sliced or cut into strips, briefly fried in oil, then sprinkled with cumin seeds, cumin powder and chili flakes, and some versions also add onion and cilantro for extra flavor.
Besides Xinjiang, Inner Mongolia, Gansu, Ningxia and other northwestern regions also have a habit of eating cumin lamb. The ingredients and heat level differ slightly from place to place, but the classic combination of cumin and lamb is basically the same. As culinary exchange has deepened, the dish has also been adapted into many variations such as cumin lamb skewers and cumin lamb rice bowls, and its audience keeps growing.
When making it at home, note that the lamb should be sliced against the grain and marinated in advance, and the frying time should not be too long, so the meat does not become tough; cumin is best used as a combination of whole seeds and powder for a fuller layering of aroma. People who are sensitive to the gamy odor of lamb can add a little cooking wine, ginger juice or onion juice during marinating to improve the flavor, and sprinkling on more cumin just before serving further highlights its distinctive character.
