Sichuan chili pepper production areas are widely distributed, with each major producing region having distinctive characteristics
Sichuan is one of China's important chili pepper producing areas. The province's diverse terrain and climate, from the Chengdu Plain to the hills of southern Sichuan and further to the dry-hot river valleys of the Panxi region, all provide conditions suitable for chili pepper cultivation. Local light and heat resources are relatively abundant, and the chili peppers grown there generally have bright red color and both spiciness and aroma, providing an important raw material base for Sichuan cuisine.
In terms of varieties, the Erjingtiao chili is the most representative in Sichuan, with slender fruit and a flavor that is spicy with fragrance, often used to make douban paste and chili oil. In addition, Chaotian chili, Xiaomila, and line peppers are also grown on a fairly large scale in various places. The southern Sichuan area leans toward fresh eating and pickled pepper processing, while the Panxi region, due to strong sunlight, is more suitable for growing small chili peppers with relatively high spiciness.
In terms of application value, Sichuan chili peppers go far beyond everyday seasoning. Classic Sichuan flavors such as doubanjiang, hot pot base, and red chili oil are inseparable from local chili peppers, and products such as dried chilies and chili powder are also sold within and outside the province. For farmers in producing areas, chili peppers have a relatively short growth cycle and stable sales channels, making them one of the important cash crops.
There is also particular care involved in selecting and storing them. Fresh chili peppers are best when the fruit surface is glossy and the texture is firm, while for dried chili peppers it is important to check whether the color is natural and whether there is any musty smell. After buying them, they should be sealed and stored in a cool, dry place. Fresh peppers can be refrigerated for a short period, and for long-term storage they can be sun-dried or made into pickled peppers.
