Celery is a herbaceous vegetable in the Apiaceae family. It is a shallow-rooted crop that prefers a cool, moist climate, and its growing period requires ample water and fertile soil. Because it is relatively sensitive to temperature, celery is mostly cultivated in cool seasons; in hot summer regions, high altitudes or protected cultivation are needed to regulate the environment. Since climatic conditions vary from place to place, the celery produced in each area differs in aroma, crispness and fiber thickness.

In terms of production region distribution, celery is grown quite widely across mainland China, with large-scale cultivation in Shandong, Hebei, Henan and other places; among them, celery from some areas of Shandong is popular for its tall plants, tender stalks and rich flavor. Taiwan's celery production areas are concentrated in the central region, where the climate in the Changhua and Yunlin area is mild and water sources are stable, making it the main supply area, with production year-round and usually better quality in the cool season.

Celery's production areas are closely tied to the season. Celery grown in the open during cool seasons has a stronger aroma and finer fibers, while celery produced during hot periods tends to age and requires more careful water management. Many production areas arrange sowing in batches and crop rotation according to the local climate, allowing the market to maintain a stable supply so that consumers can buy celery of fairly good quality in different seasons.

When buying, pay attention to the place of origin and seasonality; celery from an in-season production area is highly fresh, crisp and juicy. The shorter the time from harvest to shelf, the less flavor is lost, so choosing celery shipped directly from the production area or grown locally often gives a better taste. Celery contains dietary fiber and a variety of minerals, and whether stir-fried, made into soup or served cold, it is a common ingredient on the daily table.
