Pistachios are mainly grown in Iran, the United States, Xinjiang and other places.
The pistachio, whose scientific name is Pistacia vera, is the fruit of a small deciduous tree in the genus Pistacia, family Anacardiaceae; what people usually eat is its kernel. It originated in the regions of Central and Western Asia, and Iran, Afghanistan and other areas are considered important places of origin, with a long history of cultivation; it later gradually spread to the Mediterranean coast and other parts of the world.
Globally, pistachios grow best in environments with hot, dry summers, cool winters and large temperature differences between day and night. At present, the main producing countries include Iran, the United States, Turkey and Syria, among which Iran has long been an important global producer and exporter of pistachios, while California in the United States has formed a well-known main producing area through large-scale cultivation.
In China, pistachio cultivation is mainly concentrated in Xinjiang, with the Kashgar area being relatively famous. The local climate is dry with little rain, abundant sunshine and large temperature differences between day and night, which suits the pistachio's light-loving, drought-tolerant habits very well. Gansu, Shaanxi and other places also have a small amount of introduced cultivation, but the overall scale is limited, domestic pistachio output is not large, and a considerable part of the supply on the market relies on imports.
Pistachios have relatively high requirements for their growing environment. They are drought-tolerant and afraid of waterlogging, suitable for deep soil with good drainage, and also need sufficient accumulated heat and a certain amount of winter cold to complete dormancy smoothly, so the areas suitable for planting are not that many. When choosing, you can look for fruits with naturally split shells and plump, emerald-green kernels; pistachios from different producing areas differ slightly in size and flavor, so you can simply choose according to your own taste preferences.
