Turmeric powder is a powdered product made from the rhizome of turmeric as its raw material, generally prepared by washing, slicing, sun-drying or oven-drying, and then grinding. The finished product is mostly golden yellow or orange-yellow, with a pungent aroma, and is a common spice and natural coloring material. It should be noted that the plant referred to as huangjiang varies somewhat from place to place; most references are to turmeric, a plant in the ginger family, while in some areas Dioscorea zingiberensis of the yam family is also called huangjiang.

In terms of compositional characteristics, turmeric-type huangjiang powder contains active components such as curcumin, which is also the main reason for its golden yellow color and the attention it receives. Its powder is fine and its color is stable, and under suitable conditions it can be stored for a relatively long time. Huangjiang powder from different producing areas and varieties will differ to some extent in color depth, pungency, and content of active ingredients.

In terms of applications, huangjiang powder is an important ingredient in curry powder and is also often used in pickling, stewing, and preparing sauces, adding color and flavor to dishes. In traditional Chinese medicine, huangjiang is considered to have effects such as promoting the flow of qi and invigorating blood, and unblocking menstruation and relieving pain, and it is often used in related formulas and in medicinal-food products. Huangjiang powder made from Dioscorea zingiberensis, however, is mainly used as an industrial raw material for extracting diosgenin, and is an important starting material for the production of steroidal hormone drugs.

When selecting and storing huangjiang powder, you can check whether the color is uniform and natural, whether the powder is fine, and whether there is moisture clumping or moldy off-odors. For daily storage, it is best to seal it and place it in a cool, dry, dark place, avoiding storing it together with strongly odorous items. After opening, it should be used up as soon as possible to prevent moisture absorption and clumping that can affect flavor and quality.
