Can fresh jujubes be frozen for storage? The correct storage method tells you
Jujube is a kind of jujube, it tastes sweet, and there are quite a few ways to eat it. We can eat jujubes fresh, wash them clean and eat them directly, or dry them, and after drying they can also be eaten directly. However, fresh jujubes are relatively not easy to store. So can fresh jujubes be frozen for storage?
Can fresh jujubes be frozen for storage?
Fresh jujubes can be frozen. Frozen jujubes can be used to make fruit salad or can also be used to make porridge; they are not only crisp in texture but also fresh and sweet, and even after the jujube season has passed you can still eat fresh jujubes to supplement vitamins.
How to freeze and store fresh jujubes
1. To keep fresh jujubes fresh, you must first choose a good date for picking them. Pick them when the red fruit of the jujube has reached more than 25% coloring; red jujubes at this stage keep the longest.
2. The picked fresh jujubes still need to be sorted. Pick out the bad jujubes with bruises on the surface and black spots or insects, so that during storage moldy bad jujubes do not infect the other jujubes and affect storage.
3. Fresh jujubes are generally stored by refrigeration. Before refrigerating, first put the fresh jujubes to be stored at a temperature of 5-8 degrees C for one to two days of pre-cooling. Before pre-cooling, soak the fresh jujubes in a 2% calcium chloride solution for 30 minutes.
4. After pre-cooling, place the fresh jujubes in a cold storage room at a temperature of 0 degrees C to 1 degrees C and a relative humidity of 90% to 95% for storage.
How to choose fresh jujubes
1. Look at the peel. The peel of high-quality winter jujubes is purplish red or dark red, the grains are relatively uniform in size, there are few wrinkles, the peel is thin, and the flesh is thick and fine. If you see many wrinkles on the fresh jujubes, they may be not fresh or of poor quality, so do not buy these.
2. Look at the stem end. If the stem end of the fresh jujube has a red or dark red ring, it means it received sufficient sunlight, so the quality is certainly relatively good; and if the color of the stem end is natural with no obvious red-green boundary line, it means the fresh jujube ripened naturally and was not artificially ripened, so of course this kind can be bought.
