Gordon euryale fruit is a traditional food of Nanjing people. It has many medicinal values, so health-conscious Nanjing people certainly love eating Gordon euryale fruit. The fruit merely looks like a chicken head; its scientific name is actually Euryale ferox (locally called Gordon euryale seed), a herbaceous plant in the Nymphaeaceae family. Its fruit's outer shell resembles a “chicken head”, hence the name, and its medicinal value is quite high.

You can peel it directly, or boil it over high heat for two to three minutes and the shell will come off by itself.

Peel open its strange outer shell, and inside it is filled with green fruits like a pomegranate, and when you peel these green fruits open again, inside is the edible “Gordon euryale seed”. Nanjing was formerly rich in Gordon euryale fruit, and together with fish, water caltrop, lotus root, jiao'er cai, crab, shrimp and river snail, it formed Nanjing's “Water Eight Immortals”.

How do you eat Gordon euryale fruit?

1. Eat it raw

Gordon euryale fruit can be eaten directly raw, but more sensible people will boil it over high heat for about 10 minutes and eat it once it is cooked. There is only one reason: the shell is too hard, so after cooking it, take advantage of the softened shell and eat heartily.

2. Eat it cooked

There are far too many ways to eat it cooked. You can use it instead of soy products as a cooking ingredient, for example using the shelled kernels to make a sweet soup, or stir-frying them with lily and shrimp, and so on.
