Eat more water caltrop to protect pheasant-tailed jacanas and help Taiwan, China keep more wetlands

General News By Emily Carter 0 views

There is a kind of water caltrop called the four-horned water caltrop, and its shape is quite unusual: besides the familiar pair of shoulder horns, it also has two belly horns, making it look like a plump little penguin -- cute and endearing. But because most people are unfamiliar with it and market demand is unclear, out of the nearly 500 hectares of water caltrop fields in Guantian, the largest man-made wetland in the country, only about 7 hectares are planted with four-horned water caltrop, and 3 of those hectares are the range of Shui-Ling Organic Farm.

Why do we grow organic water caltrop?

There is no grand reason -- it is all for her! She is the pheasant-tailed jacana, which local people call the "water caltrop bird," and I prefer her other name, "dancing fairy on the waves." Because she walks on the water caltrop leaves with fairy-like elegance, and wears a beautiful summer coat of white, yellow and black that is as stunning as a fairy, yet amid the green of a full pond of water caltrop she has the best protection of all, as hard to find as a fairy, and only by looking carefully can you see her!

How to cook four-horned water caltrop

Step 1: Boil

Gas stove: just cover the water caltrop with water; after the water comes to a boil, cook over high heat for 20 minutes or over medium heat for 45 minutes.

Electric cooker: add half a cup of water to the inner pot and 3 and a half cups of water to the outer pot. Steam for about 45 minutes to 1 hour.

Step 2: Drain

Once cooked, scoop them out, drain, and eat.

If you can first rinse them in cold water or ice water before enjoying them, the texture is even better.
