Zen House's rice bread made from soil-grown rice is the only choice
Rice bread; rice bread, a family's struggle and perseverance.
Zen House is a bakery, a bakery situated beside a country lane in Huwei Township, Yunlin. It's hard to imagine a bakery opening so far from the city center. For locals to come buy a loaf of rice bread, they need at least a scooter to get there. The high-speed rail tracks pass over the upper left of their home, and from time to time bring the noise and vibration of passing trains. The concrete on the exterior wall of the neighboring house is unadorned, with exposed rebar above. It seems the story of Zen House must be beyond what outsiders could imagine.

I was very curious about the source of the fluffiness of this rice toast and rice cake. Yanling explained that the cake is 100% made from rice, and eggs alone can support this fluffiness; but for the rice toast, because there are no eggs, flour still needs to be added, blended at a ratio of 80:20 rice to flour, so that the rice toast still retains some of the texture of ordinary bread. As for the rice used by Zen House, it is purchased through contract farming, controlling the source of the rice, obtaining the most suitable and healthy rice, and insisting on adding no preservatives or chemical ingredients. The concept of [food and soil are not two] being able to ferment in this family that has encountered hardship is truly rare. In contrast, with the food safety problems that have constantly arisen in Taiwanese society recently, capable large enterprises only care about their own interests, producing food that harms the people of Taiwan to achieve their own greatness, and then taking out a small amount of money for public welfare and corporate social responsibility... truly ironic.
Government agencies are now promoting the return of farmland to cultivation, but the agricultural products grown must have a way out. In the making of this rice bread, if rice is used to replace part of the flour, besides being a possible way out, it can also raise Taiwan's "food self-sufficiency rate." Various countries list raising the food self-sufficiency rate as an important national goal, and the making of this rice bread may perhaps become one of those paths.
