How do you make homemade pickles that are both delicious and safe?

General News By Emily Carter 0 views

When commercially sold canned pickles list a whole string of phrases on the label like "absolutely no added preservatives, artificial colors, sweeteners, etc.", yet the ingredients include many terms ordinary people don't recognize, such as antioxidants, modifiers, flavorings and so on. These contents often leave consumers feeling that food production is very complicated, and even make them mistakenly believe that adding these ingredients is normal for pickle ingredients. Yet in the era of Grandma, or even our great-grandmother, when these so-called food-industry seasonings did not exist at all, how did they transform abundant fresh produce into storable pickles?
Are you still standing in the supermarket studying the strange ingredients on cans, with many question marks popping above your head? Then welcome to come to Yilan and learn traditional pickle-making from the Neicheng mothers, because everything is homemade, so you clearly know all the ingredients inside, letting you simply prepare delicious, healthy pickles to go with rice for your family and yourself!

5. Brief introduction to the event content:
(1) Pickle DIY
It might be pickled spicy bamboo shoots or fermented bean curd; since summer coincides with the typhoon season, it depends on what produce heaven bestows at the time. As the saying goes: "There isn't even enough fresh food, and you still want to dry it!" Thrifty women will of course also decide what to make based on how abundant the harvest is, so just leave it all to the experienced mothers to judge!
(2) Local friendly-ingredient lunch
We will give priority to using locally fresh, pesticide-free ingredients, letting the richness of Lanyang's produce and the wisdom of the early settlers be presented to you on the table. These are Lanyang dishes you can only eat on this trip! They let you not only eat your fill, but eat with finesse, free from worry about today's food safety issues.
(3) Green living exchange
Most ordinary households use commercially sold chemical cleaners, which harm health and pollute the environment. On this trip we will offer everyone a simple eco-enzyme making session; the natural, multi-purpose enzyme liquid can be used for cleaning, as organic fertilizer for cultivation, and more. Let you easily become an eco-expert in daily life!
(4) Neicheng rural village tour
Neicheng - a small village at the foot of the remnant ridges of the Snow Mountain Range; after the water source of the Snow Mountain Range flows underground, it emerges here, so the excellent water quality is the pride of the village. We will take everyone on an afternoon walk through the fields of Neicheng, letting you understand this small village blessed with good mountains and good water in a slow-living way. If you meet a farmer working along the way, why not stop and listen to them share anecdotes of rural life. Or when passing a stream, roll up your sleeves and pant legs, and go into the water to feel for freshwater clams and wash your pants at the same time!
