Breakfast porridge can be cooked in ten minutes, and it's not too hot to eat
In September comes White Dew, the first solar term that welcomes autumn by bringing temperatures down.
You can feel a slight dryness in the air; washed dishes dry quickly once set out, and surely the body needs some moisture to keep going too.
Waking up in the morning, the body simply says it wants congee. Congee is moist and easy to swallow, and after eating it the body and mind feel soft and relaxed.
Congee was originally a breakfast food for the people of Taiwan, yet over these past few years it has been slowly disappearing, has it not? Scalding hot congee was long ago replaced by foods that are convenient to carry on the go. At the breakfast shops on every street corner, Western fare outnumbers Chinese, and wheat flour outnumbers rice.
Eating congee in the morning is very gentle on a just-wakened stomach and intestines, and is especially suitable for women's bodies, while women, and especially men, love drinking congee. For children with poor respiratory health, mothers can cook more congee for breakfast; try skipping breakfasts that contain sugar or milk, and the child's nasal passages and throat can feel fresher. Of course, if adults also skip sugary milk tea or coffee at breakfast, their throat and nose will feel more comfortable in the morning.
Congee is a staple food with great versatility: it can be sweet or savory, spicy or sour, soft or crisp, and it goes with vegetables, melons and fruits, fish, meat, eggs and tofu, with nothing it cannot pair with. And Taiwan's rice is good, cooking into sweet, soft congee. Plain congee alone is already enchanting, and congees made from various different rice varieties, or healthy congee mixed with grains, are all good too. Is there anyone who wants to open an interesting congee shop? To break through the bread-dominated breakfast shop scene, selling congee should be a good time to do it now. A bowl of congee with a variety of optional toppings, where you can mix and match yourself or choose a combination from a distinctive recommended congee, just thinking about it feels like great fun.
Before I see a breakfast shop with good congee appear, I want to share my own family's one-bowl congee breakfast. This is a breakfast congee that can be cooked within ten minutes of getting up, and eaten right away without scalding your mouth.
Autumn is the season for loofah and yam, and purple yam can cook into a very beautiful bowl of congee.
