Home-style recipe for garlic salted egg fried rice

In Shanghai I ate at a Hangzhou restaurant that was truly great value for money - Grandma's Home.

When the fried rice arrived at the table, its color was golden yellow.

 

On tasting it, I realized it was made with salted egg yolk.

 

Back home, longing for the flavor of salted egg yolk blended with rice,

I used one salted egg, one chicken egg and two cloves of garlic, and made garlic salted egg fried rice,

using very few ingredients, it is a dish that is convenient for one person to eat.

 

Preparing the ingredients

A - Peel the garlic and chop it into fine mince.

B - Shell the salted egg, mash it, and mix it evenly with one bowl of white rice.

 

Heat the pan and the oil

1. Pour A into the pan and lightly saute until fragrant.

2. Pour B into the pan and stir-fry until hot.

3. Remove A and B from the pan.

4. Add a little more oil if needed.

5. Crack in one egg, and after five seconds, pour in A and B.

6. Mix evenly and stir-fry until cooked.

 

 

The restaurant's fried rice is more refined; it uses only salted egg yolk, and also adds scallions for color.

Since garlic is highly nutritious and also a natural seasoning, I always add quite a lot,

the improved simple version uses just a few ingredients, yet still makes a delicious fried rice that is low in oil.

 

If you prefer a lighter taste, you can try three bowls of rice with two salted eggs.
