Oi's Japanese-style miso brewing method

General News By Emily Carter 0 views

Miso is a very fine traditional food of Japan. A bowl of miso soup at breakfast warms the stomach and the just-awakened body and mind; in summer, this ingredient can be used to create many delicious cold dishes. The fermentation process adds many special nutrients to this food, and the reason Japan has long been known as a country of longevity may have a great deal to do with the dietary habit of eating miso.

Taiwan, China, which also produces rice, should likewise be able to make good use of its excellent local rice to produce high-quality miso. This time we will invite Teacher Qiuyue, who studied under Japanese masters, to guide everyone in making Japanese-style miso and to teach simple miso dishes.

1. Event date: 2013/11/02 (Sat) 10:00 am to 16:00
2. Participants: ages 16 and up (the event will be held only if at least 10 people sign up)
3. Event location: Neicheng Village, Yuanshan Township, Yilan County
4. Instructor profile: Teacher Lai Qiuyue
* Nutrition counseling, MOA International Foundation for the Promotion of Natural Ecology
* Teaching in homemaking classes at the Liugong Foundation, Taichung/Kaohsiung District Agricultural Research and Extension Stations, and Luzhou/Sanxia Farmers' Associations.
5. Event content overview:
(1) Japanese-style miso making
We will invite Teacher Qiuyue, who studied under Japanese masters, to teach everyone how to use koji mold cultivated from excellent organically grown rice from Taiwan, China, plus soybeans, to make healthy and nutritious Japanese-style miso. In the course, simple miso dishes will also be demonstrated, so that you can enjoy Japanese-flavored delicacies at home. Qiuyue, who is also a nutritionist, will introduce the benefits of miso for the body in class.
(2) Lunch with local friendly ingredients
We will give priority to using fresh, pesticide-free locally grown ingredients, so that the richness of Lanyang's produce and the wisdom of the ancestors can be presented to you on the table. These are Lanyang dishes that can only be tasted on this trip! They will let you not only eat your fill, but eat well, with no worries about today's food safety issues.
(3) Neicheng rural village tour
Neicheng - a small village at the foot of the Xueshan Range's foothills. After the water from the Xueshan Mountains flows underground, it emerges here, so the excellent water quality is the pride of the village. We will take everyone on an afternoon stroll through the fields of Neicheng, letting you understand this small village blessed with good mountains and good water in a slow-living way. If you meet farmers working along the way, feel free to stop and listen to them share anecdotes of rural life. Or when passing a stream ditch, roll up your sleeves and pant legs and go into the water to pick clams and wash your pants at the same time!
(4) Green living exchange
Most households use commercially sold chemical cleaners, which harm health and pollute the environment. On this trip we will offer everyone simple eco-friendly enzyme making; the natural multi-purpose enzyme liquid can be used for cleaning, organic fertilizer for cultivation, and more. This lets you easily become an eco-friendly expert in daily life!
